Chicken Safety – Microwave thawing: If you thaw chicken in the microwave, cook it immediately afterwards. Avoid pre-stuffing: Stuff your chicken right before you cook it. Avoid buying pre-stuffed chicken, contents may go bad faster than the chicken. Marinating: Marinate chicken no more than two days in the refrigerator before cooking. Temperature: Use a meat thermometer to ensure the temperature reaches 165° in the thigh or breast, don’t touch the bone.
